2oz light brown sugar
8oz plain chocolate
2tbsp Three Fruit Marmalade
6oz self-raising flour
zest of one large orange
50g white chocolate
Preheat the oven to 180ºC/gas mark4 and line two baking sheets with baking parchment.
Cream the butter and sugar together until light and fluffy and mix in the grated orange zest.
Melt the plain chocolate in a heatproof bowl over a pan of gently simmering water; when melted stir into the butter and sugar mixture.
Then stir in the marmalade. We added an extra 50g of chopped white chocolate to the mix as well just for some extra naughtiness!
When the marmalade and chocolate are fully mixed in fold in the flour bringing together the mixture.
Divide the mixture into roughly 16 balls and arrange on the baking sheets. Flatten each ball slightly using the back of a fork. Make sure you leave space between the cookies as they will spread.
Bake for 10-12 minutes until dry and smooth to touch. Cool on a wire rack.
