125g caster sugar
2-4 tsp marmalade (any flavour will do - I used Strawberry Fields Lime Marmalade!)
175g dried fruit
Bananas 3large or 4medium
200g self raising flour
Line a loaf tin with baking paper and preheat the oven to 160 degrees/gas mark 3.
Cream together the butter and sugar until light and fluffy, then add the first egg and beat until fully mixed before beating in the second egg. Then add the marmalade and mix in thoroughly before adding the dried fruit. I used 75g mixed dried fruit and 75g dried cranberries, because they are just so delicious!
Mash up the bananas in a separate bowl using a fork before adding to the mixture. Once fully combined sieve over the flour and fold in using a metal spoon.
Now pour the mixture into the loaf tin and smooth over the top so its roughly level before popping in the pre-heated oven on the middle shelf. Bake for 55minutes, test before removing from the oven by inserting a metal skewer into the middle of the loaf, if it comes out clean then its done!
Leave to cool in the tin for about 5minutes before lifting out onto a cooling rack, leave for another 5minutes before peeling off the baking paper and tucking in! This marmalade banana loaf is delicious whilst still warm...but don't worry it tastes equally as good cold and because its quite a moist cake it keeps well in a tin.
