So we’ve pulled out our dustpans, swept up the tumbleweed and are going to replace it with some delicious, colourful and fun recipes we’ve been working on during this particularly sweaty summer on the south coast.
This one is a Kirstie and Jen (Made By Burbs) creation, a delicious puff pastry/jam/fruit mix…what’s not to love. And the great part is you can use whatever fruit and jam combo you like. We are thinking…peaches with Summer Fruits Extra Jam, kiwis and strawberries sliced up with Strawberry Extra Jam or the classic; apples and pears with Raspberry & Apple Jam!
Pack of puff pastry
5 apples / other fruits
Handful of flaked almonds
1 tbsp soft brown sugar
Squeeze of lemon juice (if using apples or pears)
Take your puff pastry out of the fridge and preheat oven to 180 degrees centigrade. Grease and line a Swiss roll tin.
Peel and slice fruit into small wedges, if using apples or pears squeeze a little lemon juice onto the fruit now to prevent it from turning brown.
Lay out the puff pastry sheet onto the tray, prick all over with a fork leaving a one centimeter border around the edge.
Place the fruit on the pastry, overlapping the slices as you go. Sprinkle the brown sugar over the top of the fruit (if using a particularly sweet fruit like peaches you can leave the sugar out)
Finally dollop teaspoons of the jam on top of the fruit and sprinkle with flaked almonds.
Pop in the oven for 20-30 mins until the pastry is fully cooked. Serve hot with ice cream or cream. It's also pretty darn gorgeous served cold.
